Chuck and Nancy Sullivan carved out
Shinamore Farms from a dense huisache thicket just a few miles
north of Chappell Hill, Texas. This land dates itself
back to the original Impressario Grants provided to Stephen F.
Austin by the government of Mexico. We now look out on several
green rolling pastures and a magnificent new fruit orchard. The
beautiful setting of the Texas Bluebonnet Country is the

Our animals go straight from pasture to
freezer and never get near a feed lot. Animals that go through
feed yards are overfed on high fat feed in the last few weeks
or months of their lives in an attempt to rapidly increase
their scale weight and to disguise lower quality meat with a
layer of fat. This does nothing to improve the quality or taste
of the meat. All it does is increase the weight for sale.
Shinamore Farms will never send our cattle out to a feed
yard. We care about the quality of our beef.
A very common question we are asked is,
"Are your products Organic?" The very short
answer is NO. The main reason is that the government got
involved. In order for a farm to claim they sell
"Organic" food products you have go through a very
lengthy, time consuming and expensive process that includes
records dating back as long as 5 years. The small farmers
and ranchers cannot afford to go through the process. The
very people that can gain the most by growing and selling
organic food products will never be able to actually claim that
they are Organic. Ultimately, only the "Factory
farms" will be able to wear the moniker.
Shinamore Farms never uses unnecessary
antibiotics. We will not use hormone supplements.
All of our cattle are provided with the best veterinary
care but are not subjected to unnecessary vitamin supplements,
to any steroids or hormones to artificially stimulate growth or
any feedlot practices of overfeeding.
Are we "Organic"? Nope.
We can't afford to jump through the State's arbitrary
hoops but we will promise to provide you with the best tasting
naturally fed and raised beef you can get.

Don't be fooled by well conceived marketing
gimmicks, either. Would you be surprised to learn that
Certified Angus Beef means that the steer must be more than 51%
Black in color? It doesn't even have to be Angus. Wouldn't you
rather get your meat from someone who cares about how it
tastes?
We sell our pasture raised beef directly to
consumers in quarters freshly dressed and cut. Instead of
fighting over who gets what cuts we have the butcher cut the
meat so that it can be easily divided into equal weights and
value. Prices are seasonal and are based upon the weight of the
animal at time of slaughter. We only sell 10 - 15 beef
quarters per year and many of those are already spoken for.
